Identification and Effects of Skim Milk-Derived Bioactive Antihypertensive Peptides

Bioactive peptides are generated during milk fermentation or enzymatic hydrolysis. Lactobacillus (L) helveticus is commonly used to produce some types of fermented products. Fermented derived bioactive known be beneficial in human health. Anti-hypertensive play a dual role the regulation hypertension through production vasoconstrictor angiotensin II and its inactivation vasodilator bradykinin. MALDI MS/MS, nano-LC/MS/MS RP-HPLC were isolate showing converting enzyme inhibition (ACE-I) from 12% skim using combination L. Flavourzyme®. The procedure facilitated identification 133 anti-hypertensive 75% short chain amino acids, three with highest ACE-I activity reduced blood pressure rat model hypertension. freeze- dried extract was supplemented rodent chow. In this study 14-week-old male spontaneously hypertensive rats fed for 10 weeks identified added chow compared controls powder. Blood (BP) decreased significantly (p < 0.05) 6 FS groups (120/65 mmHg) NFS control groups, where BP increased (220/150 0.05).
